“农人的智慧” 一直是在AVANT熟客里面大家最提及最想要再吃到的一道菜,从开业至今这个概念的菜我们已经更新至4.0 的版本。在这个蔬菜的季节我们再次更新至5.0 版本用蔬菜与鱼的鲜美搭配。一旁的沙拉束里面运用了超过20种不同的蔬菜瓜果香草;分别运用煎、煮、炒、炸等各种烹饪方式组合。 底部加用法葱油炒过的新鲜海藻突出藻类物质的鲜美和淡淡的绿茶香。选取时令最新鲜的鱼获煎制表皮脆中间保持微糖心。最后倒入的鲜汤是我们用胡萝卜、京葱、洋葱风干后作底沁入盗汗蒸出来的葵花鸡汤最后澄清出蔬菜鲜汤。极致的鲜美在全餐的“鲜”的主题中表达最为强烈,请尽情感受这美味吧!

"Farmer's Wisdom" has remained the most frequently mentioned and eagerly anticipated dish among AVANT's regular patrons since our opening. This conceptual dish has evolved through four iterations, and now during the peak vegetable season, we present its 5.0 version featuring an exquisite pairing of seasonal vegetables with premium fish.

The accompanying vegetable bundle showcases over 20 varieties of vegetables, fruits, and herbs, each meticulously prepared through diverse cooking techniques including pan-searing, boiling, stir-frying, and deep-frying.

The foundation features fresh seaweed wok-tossed with chive oil, accentuating oceanic umami with subtle green tea undertones. Our selected seasonal fish is perfectly seared to achieve crisp skin while maintaining a tender, slightly undercooked center.

The final pour-over broth represents culinary alchemy - a clarified vegetable consommé created through solar evaporation of sunflower seeds fed chicken stock infused with dehydrated carrots, scallions, and onions. This harmonious blend creates the ultimate expression of freshness that perfectly encapsulates our "Essence of Purity" dining theme. Savor every nuance of this gastronomic masterpiece.
