而本土风物羊角蜜的加入,则为这道异国叙事添上了东方诗意。经牛至、莳萝与酸葡萄汁的慢浸,甜瓜褪去了凡俗的甜腻,幻化为一缕幽邃的草本香气。酸、甜、辣、香在此刻共振,如同一场山海之间的风味回响。

The vast coastline of Peru has birthed a wild and uninhibited culinary philosophy. Leche de Tigre (Tiger’s Milk) is the soul of this sensory feast; abandoning the restrained minimalism of Japanese cuisine, it utilizes a vibrant interplay of aromatics, spice, and heat to awaken the deep-seated sweetness within raw seafood.
Using this as our blueprint, we have crafted a gentle revolution. By infusing the traditional recipe with freshly pressed coconut milk, we allow the delicate richness of the fat to domesticate the sharp edges of the spice. As the tender, aged cuttlefish and succulent crab reunite within this velvet texture, the primordial essence of the sea is captured and amplified through layers of precision.
The inclusion of muskmelon (Yangjiaomi), a local treasure, weaves a thread of Eastern poetry into this exotic narrative. Slowly macerated with oregano, dill, and verjus, the melon sheds its mundane sweetness, transforming instead into a profound herbal fragrance. Here, acidity, sweetness, spice, and aroma resonate in unison—a rhythmic echo of flavor between the mountains and the sea
