阴米是江浙地区的一种炒米。待到腊月的日子,选上等的糯米大火蒸熟,趁晴天晒干,然后放在通风的地方收藏。这样的处理方式造就了独特的风味。蔬菜的季节,我们使用菠菜等绿叶菜榨汁后混合类似腌笃鲜的高汤,加入水芹,瓜苗,云南弯葱等各种时令菜烩入来自宁波的手作年糕; 选取当地一种独特的蛤蜊加入饱满的浓鲜。在最后的结尾我们希望回归到这个季节的绿色的主题。

Yinmi (Preserved Rice) is a type of roasted rice from the Jiangnan region. During the twelfth lunar month, premium glutinous rice is steamed over high heat, sun-dried on clear days, then stored in a ventilated area to develop its distinctive flavor.  

In the vegetable season, we blend spinach and other leafy greens into juice, combine it with a broth reminiscent of "Yanduxian" (a cured meat stew), then simmer the mixture with handmade rice cakes from Ningbo alongside seasonal ingredients like water celery, melon shoots, and Yunnan scallions. A local variety of clams is added to intensify the rich umami flavor.  

To conclude, we return to the seasonal theme of green freshness with a final vegetal accent.
