顺德旧称为凤城,自古凤城出名厨,自当顺德菜是非常有名。大良炒鲜奶是顺德名菜,最关键的食材是当地产的水牛奶与当地特产的榄仁,我们结合法式可丽饼的形式将舒芙蕾蛋体于炒水牛奶的顺滑结合,奶香四溢顺滑与榄仁独特的坚果香的基础上我们再加入糖渍过后的火腿与满膏的富贵虾,最后点缀上柠檬叶丰富香气。一旁结合西式的凯撒酱的味型突出更多帕玛森芝士与酸奶油的发酵奶香与柠檬的清新用与解腻。
"Shunde was historically known as Fengcheng (Phoenix City). Since ancient times, Fengcheng has been celebrated for producing master chefs, making Shunde cuisine highly renowned. Stir-fried milk is a signature Shunde dish, traditionally relying on local buffalo milk and indigenous olive kernels as its core ingredients.
In this dish, we have integrated the form of a French crêpe, combining a soufflé base with the velvety smoothness of stir-fried water buffalo milk. Building upon the rich, milky aroma and the distinct nutty fragrance of the olive kernels, we introduce candied ham and roe-rich mantis shrimp, finishing with a garnish of kaffir lime leaves to elevate the aromatic profile. Accompanying the dish is a Western-inspired Caesar-style sauce, which highlights the fermented dairy notes of Parmesan cheese and sour cream, balanced with a refreshing touch of lemon to cut through the richness."
